Do you use any artificial ingredients, stabilizers, or preservatives?
No. Just grass fed beef, salt, black pepper, and garlic. All whole, real foods.
What does this taste like?
Growing up I've had brisket outside of Texas, it was never good. When I moved to Texas and tried slow smoked brisket it was like I ascended into a new realm. It is full of beefy flavor. The fat becomes sweet and caramelized from the smoke. Together the beef and fat melt in your mouth. The outer layer (bark) provides a crispy and salty texture. It's the best slow smoked BBQ I've ever had. It taste like this but air dried so you can eat it anywhere.
Where are you sourcing your beef from?
We are sourcing from 100% grass fed and finished steak mostly from Texas. There are a lot of cattle ranchers in Texas and we're always finding and building partnerships with the ranchers that not only care about the cattle but regenerating the soil.
How long will these last?
They are best enjoyed within 3 days after opening. We recommend refrigeration after 3 days in order to preserve the integrity of their awesome texture. Although they will most likely be consumed once you open it!
Consume YeeHaw Snacks within 10 days after opening. Unopened bags are good for 6 months from the packed on date on the back of the bag. These are preliminary shelf-life tests.
Why are the cuts different?
Our brisket chips are made from the whole brisket which is 2 types of meat cut (flat cut & point cut). Flat cut is leaner at approximately 85% meat and 15% fat. Point cut has more fat (more flavor). When you go to a Texas BBQ joint the first question they will ask you is if you want the lean or fatty. My favorite is the fatty. We provide both cuts in the bag!
There is a white glimmery residue on my chips
That white glimmery shine on some of the chips is delicious rendered fat. Unlike ultra-processed jerky products, our unique preparation melts fat. What you are seeing is flavorful rendered fat.
